This is a wine that showcases the two souls of Sicily, a land of great
indigenous varietals like Nero d’Avola and a land that happily
nourishes international varietals like Cabernet. A blend of 80% Nero d’Avola and 20% Cabernet Sauvignon. Each varietal is handled slightly differently. The Nero D’Avola is fermented slowly over two weeks and then aged in two year old French oak barrels with a light toast for 12 months. The Cabernet is also slow fermented but aged in three year old barrels with a heavier toast also for 12 months. Once blended the finished wine aged an additional four months in oak followed by 8 months in the bottle. It shows aromas of licorice, tobacco and plums with a light touch of vanilla. Red fruits and blackcurrants come forth on the palate along with structure and body that give longevity and depth to this unique wine.
