Chateauneuf du Pape 2007 Les Cedres, Paul Jaboulet Aine

Jaboulet's Les Cedres is sourced from vines that average 45 years of age, planted in extremely stony soils made up of limestone and red clay. A blend of Grenache, Cinsault, Syrah and Mourvedre, macerated and fermented over three weeks. The wine is then aged for 12 months in a combination of new and used oak barrels. Wine & Spirits magazine scored it 93 points saying "As grand as Ch�teauneuf can be, this is simultaneously huge and graceful. The fruit feels as if it was infused with stones, and hints of rosemary and other resinous herbs work their way into the berry flavors, which feel juicy, more savory than sweet. The wine's acidity and minerality keep it lively right through the long finish�as they would with a rack of lamb."
