Located in the Cote de Blancs, where Chardonnay is lovingly cultivated in the chalky white soils. Only 17 of the 324 villages in Champagne are designated Grand Cru and Chouilly is one of them. This rich, creamy 100% Chardonnay Grand Cru Champagne comes from a family owned house where all of the wine making is done by hand.

While we havean't opened a bottle yet, I was pleased to find this champagne. We experienced it at dinner at Eleven Madison Park and were warned that it might be hard to find.... indeed, this was the only place that had it!

I enjoy Champagne that is full flavored with a bread dough and honey falavored over a lean citris flavored wine. Do you have any taste descriptors on this wine?

  I believe you'll enjoy this. It shows Baked bread, minerals and golden apple on the nose. On the palate a very appealing mousse leads to citrus and honey notes in a medium to full-bodied framework. Lingering finish.
