Inniskillin Ice Wine is a gift from winter to wine lovers. Harvested at the pinnacle of Canada's crisp winter, the grapes are naturally frozen on the vine and picked when the temperature drops below -10 degrees Celsius. The removal of ice crystals, separated from the frozen grapes during pressing, concentrates the juice into a delicate nectar to achieve the rich and alluring specialty known as Icewine. Wine Enthusiast Magazine scored the 2011 it 91 points saying "This vibrantly aromatic wine brings generous notes of honey, pineapple, papaya and apricot. Itís intensely sweet and rich in flavor and feel, lingering on the finish."
I try different ice wines whenever we go to Niagara Falls, Canada. Inniskillin is one of the best vineyards! I don't typically drink at home, but I have a small glass of ice wine almost every evening. A typical serving is only 1.5 ounces because of the sweetness. So, although the bottle is smaller than a standard bottle of wine, you can pour several servings from the 375 oz bottle. Drink by taking small sips and swish in your mouth before swallowing. It is heavenly!
