Flying Wine Cellars 2007 Syrah, White Hawk Vyd., Santa Barbara County
Flying Wine Cellars is the brainchild of Marilyn Sherman whose husband is a pilot and airplane fanatic. She was a partner at Crushpad winemaking facility which is where she created this single vineyard Syrah. Grapes are sourced entirely from the White Hawk Vineyard in Santa Barbara. The White Hawk Vineyard is planted on ancient sand dunes on the south facing slope in the Los Alamos Valley in Santa Barbara County. Planted at 900 feet elevation. Fog often embraces the small vineyard in the morning before gentle afternoon breezes chase it away to allow the sun's rays to slowly ripen the fruit. It's farmed using sustainable and primarily organic viticulture and Syrah yields are very small with intensely flavored berries. Fruit from White Hawk vineyard is sourced by several prominent wineries including Sine Qua Non, Ojai Vineyard, Andrew Murray Vineyards and Sea Smoke Cellars. This 2007 was fermented with 3% Viognier and the wine was aged 16 months in French oak barrels. It's been aging slowly at the winery since then and has reached an exceptional peak of lush, palate coating, complex drinkability. Flavors include blueberry, black cherry, black plums along with meaty and earthy notes. There's a lift of acidity from the Viognier and some delightful floral notes on the nose. The texture is soft velvety and it finishes long and ligering. This wine, like the the 2006 is real find and one that you should not pass up, especially at this outstanding sale price!
