Started over three decades ago, Acacia is a winery that helped to establish the Carneros region as one of the very best in California for Pinot Noir and Chardonnay. Acacia produced one of the first Pinot Noirs from the legendary Winery Lake Vineyard and today sources a large portion of the grapes for this wine from Winery Lake. The other main source is their own Lone Tree Vineyard that surrounds the winery. (The "Lone Tree" is the acacia tree that gives the winery its name.) Grapes are hand sorted in bunches and then sorted again after de-stemming to insure that the only the best fruit is utilized. After a sort cold soak fermentation is started with all native yeast. Open top fermenters are used with gentle punch downs over an extended maceration. The wine is racked into primarily French oak barrels and aged for 7 months. Beautifully perfumed with bing cherry, strawberry and vanilla, the wine shows a supple but well-composed texture with flavors of black plum, black tea, cherry, raspberry, cherry and toast.
