Willamette Valley Vineyards 2013 Pinot Noir, Whole Cluster, Willamette Valley
To capture pure Pinot Noir fruit with beautiful depth and structure this wine is produced by through whole cluster fermentation and carbonic maceration. A process that originated in Burgundy, Willamette Vallley Vineyards has had great success with it over many years. The whole grape clusters (including the stems) are gently conveyed into stainless steel tanks that have been filled with CO2 gas. Yeast is then added and the lid closed tightly to exclude any excess oxygen. Pressing takes place when aromatic and taste characters are ideal and tannins are still gentle. After pressing, fermentation finishes over a 7-10 day period in stainless steel tanks. The result is like a liquid fruit salad in a glass. Bright ruby, vibrant aromas of fresh cherries, strawberries and clove with a hint of earthiness, then rich berry and spice flavors with a juicy mid-palate with soft supple tannins and mouthwatering acidity. Hard to imagine a tastier more fruit-forward Pinot Noir.
