Textbook 2010 Mise En Place, Cabernet Sauvignon, Oakville, Napa Valley
It is called “Mise En Place” to reflect the preparation and diligence exercised in the vineyards and winery. Cabernet Sauvignon for "Mise En Place" comes from two very special single vineyard sites located on the extreme eastern and western sides of the Oakville District abutting the rugged and dry Vaca Mountain Range. This sub-section of the Oakville AVA is renowned for superb, richly-textured Cabernet Sauvignon. The Textbook vineyard is actually neighbors to the Screaming Eagle Vineyard and down the road from Joseph Phelps' Backus Vineyard and Rudd Vineyard; about as prime a piece of vineyard land as you'll ever see. Yields are very low, less than 2.5 tons per acre. Hand harvested and hand sorted the grapes slowly ferment for 19 days before going into barrels. 100% French Oak for 22 months before hand racking and egg-white fining. Steve Tanzer scored it 92 points saying "Opaque ruby. Sexy aromas of candied dark berries, pipe tobacco, licorice and vanilla, with a smoky topnote. Broad, pliant, seamless blackberry and cherry-vanilla flavors are brightened by a spicy element. Emphatically fruity but structured cabernet, with strong finishing power and subtle, well-knit tannins that add shape. The fruit for this wine is sourced from a site in the high-rent eastern side of Oakville."
