This wine is 100% Cabernet Sauvignon. For Slow Press Cab the grapes are sourced from three regions known for rich Cab fruit. Paso Robles’ hot climate provides Cabernet fruit with ideal tannins, phenolics, and flavor. San Lucas in Monterey has warm days and cool nights to bring bright red fruit and light herbal notes. Finally Lodi has higher than average temperatures and lots of sun for jammy, flavor-packed fruit with ripe tannin. These rich, ripe grapes from the extraordinary 2015 vintage macerated for 14 days in stainless steel and here's where the Slow Press comes in. After maceration the wine is pressed off the skins gently and slowly so as not to extract excess tannins. The wine was then aged 9 months in American oak barrels. It's classic Cab with bright cassis, blackberry and black cherry notes. Hints of toasty oak add to the flavor profile and the tannins are velvety and soft. The wine finishes dry and smooth with a lingering notes of black cherry. Wine Enthusiast Magazine liked it enough to make it an Editors' Choice, scoring it 91 points and saying "Generous and flavorful, this is one of the best California AVA wines available. It's concentrated and tannic, with medium-full body, a hint of sweetness and layers of dark cherry and plum fruit. Baking spice nuances linger on the finish. Best after 2019. Hard to find a Vab this good for the price.
