Chateau Billeron Bouquey is located in the commune of Saint Hippolyte, at the foot of the hills of Saint-Emilion, with sandy and sandy-clay soil, producing wines from both Saint-Emilion and Saint-Emilion Grand Cru. The estate is run by the two daughters, Inès and Laurence. They take great care in manually harvesting and then selecting the grapes before production. The winemaking is done both in concrete tanks and stainless steel, and the aging process lasts from 12 to 18 months and is done in new oak barrels for Saint Emilion Grand Cru.
This 2016 Grand Cru is 80% Merlot and 20% Cabernet Franc from mature vines averaging 30 years of age. It shows a deep purple color, with floral and fresh fruit aromas as well as notes of exotic spice. The palate is supple and round with notes of black plum, black cherry, cedar and cardamom, supported by smooth and well polished tannins. The finish is long with woodsy spice notes lingering long.
