About Domaine Chavy 2020 Puligny-Montrachet

The estate of Gerard Chavy has now been split into two separate estates by his sons, Jean-Louis Chavy, and Alain Chavy. Jean-Louis has built a brand new winemaking facility and a deep temperature controlled cellar at the bottom of the village. Vinification is classic barrel fermentation with temperature control and only natural yeasts. For the elevage of the wines the use of new oak is restrained with just 25% new oak for Premier Crus.

Several plots are responsible for the village level Les Tremblot has limestone and Jean-Louis describes as “Puligny character,” Les Meix, Les Levrons (rounder character from stones and gravel soils/good drainage), Corvée des Vignes and Les Reuchaux. Jean-Louis uses a pneumatic press for the Chardonnay clusters and gives the juice a 24-hour settling period. All of the wines are barrel fermented except for the Bourgogne. JeanLouis adds a cultured Burgundy yeast so that the fermentation starts quickly a continues at an even temperature until dry. He does allow native bacteria to complete malolactic fermentation and he favors regular bâtonnage because he likes the texture and roundness that it gives the wines. The villages wine is aged18 months sur lie in 20% new oak.
