The Moillard wine estate – Domaine Moillard – spreads over Côte de Nuits and Côte de Beaune, from Vougeot to Volnay. Half of the wines produced on the estate are Premier Cru. The Chardonnay grapes for this astounding Bourgogne come mainly from parcels located in the Mâconnais. The south of Burgundy enjoys a sunnier climate, providing very rich and ripe grapes from vines aged 15 to 40 years in the limestone, calcium rich soils.

Pressing and settling is done directly by the most experienced vine growers and only the best musts are then blended to craft a Bourgogne Chardonnay that is powerful, elegant and fresh. The cuvée is then seeded in yeast and chilled before being sent to our Savigny Les Beaune site for being fed into 228L oak barrels. Alcoholic fermentation takes place in oak barrels.

Ageing in oak barrels for 10 months, 25% new oak, with regular stirring and ullage to gain in richness and roundness. Natural malolactic fermentation which brings complexity to this simply stunning wine which completely overdelivers on the QPR scale. What could easily be mistaken as a village Cote de Beane wine, this is loaded with complex and focused pear and apple fruit, exuding searing acidity that is perfectly balanced by the sandalwood and vanilla from the oak ageing, along with just the right amount of butter notes on the palate. It is crisp, clean and round now, and will only evolve and improve with a few years in the cellar. How many Bourgogne wines can you say that about? Not many!
