About Newton 2016 Unfiltered Cabernet Sauvignon, Napa Valley
Newton Vineyards is one of the first wineries to be established in the Spring Mountain region of Napa Valley. Over three decades they have produced consistently fine wines building a strong reputation for quality as well as value. A pioneer of unfiltered wines in California, their Unfiltered Cabernet is always a full-bodied and distinctive wine. A blend of 85% Cabernet Sauvignon, 6% Petit Verdot, 6% Merlot and 3% Cabernet Franc. Once harvested, the grapes were sorted using an optical sorter that inspects individual berries to ensure uniform, perfect ripeness. The must then underwent five days of cold maceration followed by seven days of To develop additional complexity, the wine rested on its skins for as many as 20 days before being pressed and aged for 14 months in French oak barrels, 15% of which were new.
