Polvaro in the Venzia DOC is an estate that dates back to the 1600's. The De
Zan family, makers of the Candoni wines, have restored it to modern grandeur and
have a state-of-the-art winemaking facility here. The property is located just
northeast of Venice, close enough to the Adriatic to have a very balanced, warm
microclimate.
The Cabernet grapes for this wine are hand-picked during the
first two weeks of October. First they are pressed, then they undergo a
crushing process for ten days in order to extract the colors, aromas, and
tannins. The wine is aged in two different styles: for eight to ten months,
half of the wine rests in steel tanks while the other half resides in French
oak barrels. After this period of separation, they are blended together then
bottled. This Cab is elegance and well-balanced. It has a deep ruby color and
aromas of blackberry, blueberry, and dried herbs and spices. It is lush and softly
smoky on the palate with notes of lingering fruit, sweet licorice, and fresh
vanilla.
