For Slow Press Cab the grapes are sourced from three regions known for rich Cab fruit. Paso Robles' hot climate provides Cabernet fruit with ideal tannins, phenolics, and flavor. San Lucas in Monterey has warm days and cool nights to bring bright red fruit and light herbal notes. Finally Lodi has higher than average temperatures and lots of sun for jammy, flavor-packed fruit with ripe tannin. These rich, ripe grapes from the extraordinary 2016 vintage macerated for 14 days in stainless steel and here's where the Slow Press comes in. After maceration the wine is pressed off the skins gently and slowly so as not to extract excess tannins. The wine is then aged 9 months in American oak barrels.
This 2016 was awarded a Platinum Medal and 94 points in the 2019 Critics Challenge Wine Competition. The judge's notes say "This will more than fit the bill for fans of spicy Cabernet Sauvignon, with aromas and flavors of cinnamon, clove and nutmeg riding alongside blackberry fruit. A drink me now glass of pleasure!"
