An ancestor of the Fabre family, Guillaume de Rouville was a noble-minded and respected city councillor of Lyon in 1589. The locality « Olagnon » north-facing soils (at 400 metres altitude) impart great minerality to the grapes. The grapes, with their stems, are gravity-fed into a truncated-cone wood vat, specially designed for the quantity of grapes used for this cuvée. The wines are aged in one of two types of barrel: demi-muids and foudres. In total, ageing lasts 18 months on average.
This wine, made with grapes from the best plots, is a deep crimson. Its voluptuous and sensual character evokes the terroir, exuding blackberry and herby garrigue flavours.
