Marsala is made from a blend of wines from three local Sicilian grape varieties; Grillo, Cataratto and Inzolia. The wine is fortified with neutral grape brandy then sweetened, either with boiled down must or with grape juice whose fermentation has been stopped with the addition of brandy. The wine is aged in casks solera-style like sherry giving it another note of complexity.
