About Napa Cellars 2019 Cabernet Sauvignon, Napa Valley
Started by Rombauer back in the 80's Napa Cellars is now owned by the Trinchero Family Estate. As a result, they are able to source premium Napa fruit from their almost 300 acres of estate vineyards in Napa Valley. That's really what makes this wine stand out and why it's so good. It's not just another Napa Cab but it's a Napa Cab with pedigree, quality and consistency, all at an amazing value. The excellent 2018 vintage brought beautifully ripe, complex grapes throughout Napa Valley. Grapes were carefully selected from prime vineyards in some of Napa Valley’s best regions, including Atlas Peak, St. Helena, Oak Knoll and Rutherford.
The grapes were hand-harvested in the cool morning hours to ensure optimal flavor. At the winery, the fruit was hand-sorted, gently de-stemmed and lightly crushed. Following a maceration period to maximize color and flavor extraction and to also polish the tannins, the wine was aged in 100% French oak barrels (43% new) for 20 months.
This wine boasts aromas of black currant, boysenberry, black plum, and molasses. The finish is polished with well-rounded and soft tannins. This Cabernet pairs perfectly with filet mignon glazed in a rich balsamic reduction.
