Azienda Salvioni is a small family-owned property in Montalcino. Their 45 acre “La Cerbaiola” Vineyard lies at 1300 feet overlooking the Val D’Orcia. Production is deliberately limited, to obtain the very best from a unique terroir: 10,000 bottles a year when only Brunello is made (833 cases).
All the work in the vineyard is carried out by hand, with hard pruning to obtain low yields of fruit and careful selection during the manual harvest.
Following the grape harvest, fermentation and racking take place in stainless steel tanks in the cellar located just beyond the vineyards. Once malolactic fermentation is complete, most of the future wine is aged in 20 hl Slavonian oak casks in the cellars.
2016 was an outstanding vintage and this wine was scored a perfect 100 points and awarded a Cellar Selection by Wine Enthusiast Magazine who said “Absolutely stunning, this gorgeous red has enticing aromas of wild rose, forest berries, new leather and camphor. Full-bodied and delicious, the smooth, structured palate is all about flavor, focus and finesse, doling out succulent black cherry, crushed raspberry, star anise and white pepper notes framed in tightly knit, refined tannins.
