About Sola Provus 2017 Cabernet Sauvignon, Oakville, Napa Valley
An amazing find! Wendy and Jeff, owners of Sola Provus, followed their passion, when in 2015, they left their jobs in high-tech to enter the world of Napa Valley winemaking. Selling their worldly goods to invest in the revitalization of an old winemaking facility in Oakville. They brought in modern day, state-of-the-art equipment and their efforts quickly began to pay off.
Oakville of course, is synonymous with great Cabernet. Their creation is this excellent, small-batch Cab that speaks to exactly what you want and expect from this stellar appellation.
Careful grape selection was follows by a cold soak and then a slow fermentation and maceration in temperature controlled tanks. The wine was then aged in French oak barrels.
It shows aromas of cassis, crushed blackberries, bay leaf, cool red berries, saddle leather and cardamom. The silky and round palate is full of black fruits, sweet herbs and spiced cherries. A finish of toasted oak and vanilla cream lingers in a wonderful sensory experience.
