About The Pairing 2015 Red Blend, California
Yes, it's from the Central Coast where Pinot Noir and Chardonnay rule the day but this is a wine with a unique pedigree. The Paring is a Cabernet blend made from the vineyard blocks that are either too young or don't fit into the vintage style of the highly acclaimed Jonata. Of course that winery is part of the portfolio of the owners of famed Screaming Eagle, so they know very well how to produce superb wine from Bordeaux varietals.
The grapes are sourced primarily from three Santa Barbara regions; Santa Ynez Valley, Sta. Rita Hills and Santa Maria Valley. The Paring Red 2015 is 50% Cabernet Sauvignon, 20% Merlot, 20% Cabernet Franc and 10% Petit Verdot The wine was aged in 55% new French oak from select coopers, for 22 months and the bottled unfined and unfiltered.
Jeb Dunnuck scored this 92 points saying "The 2015 Red Wine is the Bordeaux blend of the estate and is 50% Cabernet Sauvignon, 20% Cabernet Franc, and the balance Merlot and Petit Verdot, all from declassified Jonata lots. Its deep, inky purple color is followed by a rich, powerful wine that’s loaded with notions of blackcurrants, unsmoked tobacco, graphite, and crushed rocks. With background oak, full body, ripe yet present tannins, and a great finish, it’s going to keep for at least 7-8 years"
Wine Enthusiast Magazine scored this 92 points saying "Candied blackberry aromas meet with cola spice, licorice and wet earth on the nose of this red blend from the same team behind the Jonata and The Hilt wineries. There is a strong structure to the full-bodied palate, where black fruit plays with cocoa and pepper spices."
