There's an often made comparison of South African Chardonnay to White Burgundy. And for good reason, the cooling effects of the ocean in South Africa's Franschhoek create a very similar micro-climate to the one found in the Cote D'Or. So it is no surprise that superstar Burgundy producer Philippe Colin of the famous Colin-Deleger vineyard in Chassagne Montrachet, became enchanted with the 160 acre ranch, and purchased the estate. Philippe is the winemaking partner, and his business partner, Serge Jaczynski, is a sommelier from Southern France who counts Michelin 3-star restaurants among his clients.
For this wine grapes are handpicked early in the morning to keep the freshness. The must is settled and the alcoholic fermentation starts with wild yeasts in a stainless steel tank for 1 week, before to be transferred into 450L Rousseau Piano French oak barrels. Aging is over the 12 months with batonnage are done every 2 weeks.
The wine shows complex and fresh in a Burgundian style with bright acidity. It has subtle oak aromas and a luxurious mouth feel with flavors of pear, golden apple, mango and notes of minerality. An amazing value when you consider Burgundy of similar quality is three times the price!
