Economic and environmental sustainability are the driving principals at URLAR. These practices are about giving life back to the soil and managing the vineyard as a balanced sustainable unit. This includes organic practices such as recycling through composts and liquid manures and increasing plant bio diversity. The result is beautiful, clean, true wines that have not impacted negatively on the soil as they have been crafted.
Parcels of Pinot Noir are hand harvested and destemmed for fermentation in tank. Fermentation by indigenous yeasts from their organically farmed vineyard drive the fermentation. Pressing off and barrelling down into French oak barriques (20% new). Natural malolactic fermentation in barrel occurs and completes in spring or before. The wine is aged on lees and racked prior to the next harvest for blending and bottling.

Wine Spectator scored this 91 points saying, "Supple and elegant, with generous ripe cherry and strawberry preserves at the core, along with hints of green olive, earth and dried rose petal that gain momentum on the finish, where a chai tea note lingers."
